Red Paprika (or Capsicum) with Baby Potatoes in Yogurt Curry
While experimenting with the available nutritious resources, I developed this main course dish... :)
You will need :
6-7 baby potatoes- boiled, peeled & piereced,
Yogurt- 1 cup,
1 medium Red bell pepper/ capsicum/ Paprika -sliced.
2 onions sliced,
Salt, red chilli powder, chopped garlic,oil.
Method:
Mix salt and red chilli powder with yogurt in a bowl.
Deep fry the pierced potatoes and add them to the yogurt.
In a pan/Wok, heat oil.
Add chopped garlic, sliced onions and paprika/capsicum and fry for 5-6 minutes on medium heat. The onions should be soft and translucent.
Add the yogurt- potato mixture to it and cover pan for another 3-4 minutes.
Your curry is ready. Serve with paratha/Chapati.
